I went home this bank holiday weekend to spend some QT with the family and experimented with new cake ideas. My mum taught me how to make cakes so my inspiration for ideas comes from her. She suggested putting some Philedelphia (yes, cheese) in the chocolate icing to make it runny and give it that melted look and it worked! She's a cake genius, my mum. The cheese seems to set much softer than butter and creates a glazed look too.
So, one afternoon my older sister came over and we made these yummy chocolate cup cakes with a forever melty icing, even when put in the fridge! They are great with a cup of tea and something naff on the telly. We created our own afternoon tea complete with vintage tea set. It was so much fun and it was lovely to have a chat and relax with these chocolatey treats and my family!
